Sample Recipes
The following recipes are taken from "Lean Bodies for Life." Kathy Coker has
provided 4 weeks of scrumptious dishes from her test kitchen. Just think.all
the great dishes you grew up with specifically designed for the LEAN BODIES
program. Dr. Cliff has provided his LEAN BODIES eating program at the front of
the book in a "no thinking" structure. Kathy has provided the delicious

Dr. Cliff's Breakfast Blend
1 cup ice
1 cup of water
2/3 cup raw oats (1 cup for men).
1/2 container of fat-free yogurt (less than 12 grams of sugar)
1 scoop Parrillo vanilla or peach or banana Hi-Protein powder
4-6 strawberries
Combine all ingredients in a blender
Blend 2 minutes or until smooth
Springerhill Ranch 98 Lean Cornbread "Pie"
1 pound of ground Springerhill Ranch 98 Lean Beef (Browned)
1/3 cup chopped onion
1/4 cup de-fatted chicken broth
2 teaspoons chili powder
1 teaspoons Worcestershire sauce
1 cup canned tomatoes
1 cup drained kidney beans
1 cup cornbread batter
Preheat oven to 425 degrees F.
Prepare the cornbread batter per direction on the cornmeal sack. (NOTE: Please
use a BOLTED cornmeal or a STONEGROUND cornmeal to stay true to the Lean Bodies
Program.) "Saute" onions in chicken broth until onions are clear and tender.
Add the seasonings and the tomatoes, cover, and simmer on low heat for about 15
minutes. Add the beans. Pour the mixture into a casserole which has been
lightly sprayed with a non-stick spray. Top with the cornbread batter. Bake for
20 minutes.
Good Morning Waffles
2 cups oatmeal flour
1 teaspoon baking powder
2 teaspoon baking soda
2 cups splenda (Yes! Two! These are really sweet and good! Or use your favorite
powdered sweetener - adjust amount to taste)
2 tablespoon Captri or safflower oil
1 T. McCormick Vanilla, Butter and Nut Flavoring ( This is the secret to this
recipe!)
1 cup Egg Beaters or 6 egg whites
1 cup lowfat buttermilk (Do not substitute skim milk. If you do, then eliminate
the baking soda! Otherwise, these will be very bitter to the taste!)
Mix all ingredients well. Batter should be thick. Pour carefully into a
pre-heated waffle iron and cook until most of the "steam" has stopped.
(Approximately 5 minutes, depending upon individual waffle irons) You may find
it necessary to lightly spray some Pam or other spray product onto the waffle
iron. This recipe yields about 12 individual waffles.
(Hint: These freeze beautifully! Just pop them into baggies and all you have to
do is [op them into a toaster when you are in a hurry!!)
Serve with Log Cabin syrup sweetened with Splenda! Delicious!!
